Ingredients

  • 2-3 cups cherry tomatoes

  • 1-2 garlic heads

  • 1 TBSP olive oil

  • 1 tsp salt

  • 1/2 tsp fresh cracked pepper

  • 1 sprig thyme

  • 1 sprig oregano

Directions

  • Preheat oven to 350°F.
  • Halve the cherry tomatoes. Peel and mince the garlic.
  • On a large baking sheet, toss together tomatoes, garlic, olive oil, salt/pepper, and herbs. Spread into an even layer.
  • Bake for 30-45 minutes, or until tomatoes are soft and very fragrant. I like to let a few start browning.
  • Serve smeared on toasted sourdough with fresh mozzarella, toss with pasta, or add to a breakfast egg sandwich. Store leftovers in a jar topped with olive oil and use similarly to pesto in future recipes.
